When will I learn? I just cannot eat potatoes in any way, shape, or form.
Twice-baked potato filling - one of the worst PBs I've ever had.
Potato chips - PB or stuck every time.
French fries - PB or stuck 99% of the time.
Mashed potatoes - 50/50 chance of running for the toilet.
I just have to be done with potatoes, as sad as that makes me. Sigh.
That sucks!! I love me some papas... how ever they come! I hope that one day it changes for you!

ReplyDeleteI have a great recipe for albondigas, and where I normally have problems with meats of all kinds/cuts, I use ground turkey with gluten-free breadcrumbs for the meatballs, and roll them into teeny-tiny little meatballs (think the size of a grape or cherry) I find that since these potatoes are cut into small bits (try 1/2" cubes) and surrounded in liquid, that they'll go down my band, even when I'm super tight.
Karen's Albondigas
4 Cups Water
2 beef bouillon cubes
4 Carrots - diced into medallions
2 small potatoes, diced into 1/4" - 1/2" cubes
4 Ribs Celery - diced
1 onion - diced
1-1/2 cups salsa - whatever heat you like (momma likes it HAWT!)
1 pound ground turkey
1/3 cup breadcrumbs (momma makes her own with gluten-free bread)
Put water in medium-large stock pot. Toss in bouillon, and put on medium-high heat. While that's heating, dice carrots, potatoes, onion, celery, and toss that in. Stir in the salsa, and bring to a boil. Reduce to medium heat and cook 30 minutes. While it's cooking, mix together the ground meat and breadcrumbs. Roll into small meatballs (whatever size you think you can chew) drop them into the mix. Cook 20 minutes, or until meatballs are done. YUM.
I generally can't eat potatoes in any form, except mashed or in this recipe. I make mashed potatoes for the family, and then once I put it in a bowl, I put my serving to the side, and mix in some more milk, so that the consistency is more wet. Otherwise, PB time!
OMG. My death food is pork anything. I'm so glad potatos have not made the list. Jeez...that is so not fair.

ReplyDeletePotatoes are ok for me and I am thankful! Sorry you are having issues with me. Just once again goes to show how different each of us are physically with our bands.
I can only do mashed potatoes...that is my saving grace because life without mashed potatoes is like peanut butter without the jelly.
